葱燒刺參

食材:

地中海特選黑刺參1/4磅、高湯1杯、太白粉1湯匙、青葱10根、薑6片、花椒粒1湯匙

調味料:

蠔油、醬油、米酒各1湯匙、糖1茶匙

做法:

1. 先將海參發泡洗淨備用。

2. 鍋內燒熱油3湯匙,放下花椒粒,小火炸至香味飄出,取出花椒粒,倒出少許花椒油留用。

3. 原鍋加入2湯匙油,燒熱後爆香青葱及薑片,待青葱炸至金黃色,加入蠔油、醬油及糖,炒香後,將海參下鍋並淋下米酒及高湯,燒煮5分鐘。

4. 最後用太白粉水勾芡,淋下1/2茶匙花椒油即可盛盤上桌。
