老許珍饌 —— 野參燉官燕

燕窩自古為食補珍品首選,歷代宮廷中皆用燕窩進補養生,成了御膳常饌。時至今日,尋常百姓也可以利用美味的燕窩來調養生息。這道野參燉官燕是以上好的燕窩,搭配具有補益正氣、增強體質的正野山參片同燉,芳香撲鼻、口感香滑回甘,滋補效果可謂最佳,同時適合各種年齡層食用,是一道最高貴的甜品。

食材

野山參片15克,燕窩2盞,冰糖2湯匙,紅棗6粒,枸杞子10克

做法

  1. 燕盞放入乾淨的碗中,加入冷開水浸泡4~6小時。
  2. 泡發完成的燕盞輕輕撕開成細條狀,並去除雜毛清洗乾淨備用。
  3. 將燕窩、野山參片、紅棗、枸杞子及冰糖放入燉盅,加入適量清水蓋過食材的高度,移入大鍋中,燉盅外的水位大約是燉盅的一半,隔水燉50分鐘即可食用。
