咖喱烤羊腿

馬上就過年了,許氏參活小廚特別製作「年菜系列」,和大家分享如何為家人準備一桌豐富的年菜,敬請期待!並祝大家虎年大吉!

年菜系列首先登場的是咖哩烤羊腿,做法比想像中容易很多,雖然有些人不喜歡羊肉的羶味,其實只要掌握好烹飪方法,咖哩香味和肉質細膩的羊腿肉徹底融為一體,香味撲鼻,口感軟嫩而不肥膩,相當誘人。

食材:

羊腿肉一隻、大蒜10粒、洋蔥1顆、蘑菇10朵、紅蘿蔔、西芹、茴香

調味料:

調味粉(咖喱粉1湯匙+肯瓊(Cajun)香料粉1湯匙)、橄欖油2湯匙、白酒半杯、鹽及胡椒粉各少許。

做法:

1. 羊腿肉連皮切大塊,加鹽、胡椒粉拌醃入味。

2. 洋蔥切塊,與大蒜一起用橄欖油炒香,接著加入西芹、紅蘿蔔及調味粉拌炒均勻。

3. 加入羊腿塊炒香後,下白酒及蘑菇拌炒均勻,即可盛入烤盤,最後在表面舖上新鮮茴香增添香氣。

4. 烤盤放入已預熱至350°F的烤箱中,烤2小時即可趁熱食用。

5. 亦可在烤盤上蓋上鍚紙再進烤箱,可以保持羊肉鮮嫩多汁的口感。

烤羊腿時可加入新鮮花旗參同烤,風味更佳。
