珍珠丸子

年度鉅獻!慶祝虎年春節的到來,許氏參活小廚特別為大家製作「年菜系列」,和大家分享年節期間常吃到的菜色,並祝大家虎年大吉!

年菜系列三,又到了大年初二回娘家的日子,小廚要為大家介紹這道喜氣洋洋,象徵吉祥、圓滿、如意的珍珠丸子。

丸子象徵著圓滿和團圓,雪白晶瑩的糯米,包裹著鮮香軟糯的肉丸,就像佈滿了珍珠,既好吃又有顏值,吉祥又高雅。最重要的是做法簡單,廚房小白也能輕鬆完成喔!

食材

豬絞肉1磅、蝦米2湯匙、新鮮花旗參1支、荸薺6顆、蔥2支、薑2片、長糯米1.5杯、胡蘿蔔1支、太白粉2湯匙

調味料:

醬油1湯匙、鹽1/4茶匙、酒1/2湯匙、雞蛋1粒、麻油1茶匙、胡椒粉少許

做法:

1. 長糯米洗淨後,用泠水浸泡30分鐘,瀝乾水份備用。

2. 新鮮參及荸薺切成小丁備用。

3. 蝦米洗淨泡軟後切碎備用。

4. 將蔥和薑片放入水中抓拌成蔥薑水備用。

5. 絞肉和蝦米放在砧板上,分次加入蔥薑水,用菜刀再剁到有粘性後,放在大碗中。

6. 依序加入雞蛋、醬油、酒、麻油、胡椒粉、鹽及太白粉,順著一個方向攪拌至牽絲起筋後,加入新鮮參及荸薺拌勻即可。

7. 瀝乾水份的糯米,拌上少許太白粉,舖放在大盤子上。

8. 混合均勻的肉餡用手擠出大小適中的丸子,放在糯米盤中輕輕滾動,讓丸子表面均勻地沾上一層糯米。

9. 處理好的丸子間隔整齊地放在胡蘿蔔片上,大火蒸25分鐘即可。

溫馨提示

1. 也可以用黑米或大米取代𥽛米,但糯米口感會更好些,不論用什麼米,都記得要提前泡發。

2. 丸子要輕輕讓糯米粒均勻地裹在外面,注意不要讓米粒崁進肉丸中,才不會有糯米蒸不透的問題。

3. 裹好的珍珠丸子會有空隙,蒸熟米粒膨脤後,顆粒飽滿,會把空隙填滿,而且糯米會立起來,丸子看起來才會雪白圓潤。
