老許珍饌 —— 花團錦簇

一般花團錦簇是形容五彩繽紛、繁華美麗的樣子。這道名為花團錦簇的干貝芥菜心,以北海道干貝、芥菜心、鮮百合、蕃茄為主食材,其中新鮮芥菜口感略帶苦味,但是咀嚼後會產生甘甜味,意味著苦盡甘來,再搭配鮮美的北海道干貝,鮮脆甘甜的口感及賞心悅目的外觀,令人食指大動。由於芥菜也被稱為長年菜,因此這道有別於傳統做法的長年菜,也可以是一道應景的年菜。

食材:

北海道干貝6粒,芥菜1顆,新鮮百合2球,蕃茄2顆,雞湯2杯,開水8杯,油2湯匙,蔥1支,薑2片,酒1湯匙,太白粉1/2湯匙,小蘇打1茶匙

做法

  1. 蕃茄洗淨切塊。
  2. 新鲜百合去除根部,剝開洗淨後,熱水川燙3-5秒,取出備用。
  3. 取8杯水加入1茶匙小蘇打煮滾後,加入芥菜煮1分鐘立即撈出用冷水沖洗乾淨。
  4. 取芥菜嫩心,修剪整形成約兩吋菱形狀備用。
  5. 北海道干貝放在小碗中加開水半杯浸泡1小時,連同泡干貝的水一同放入蒸鍋蒸20分鐘,留4個完整的干貝,其他撕成干貝絲備用。
  6. 起油鍋爆香蔥段、薑片、淋酒,加入3杯雞湯及干貝絲,煮滾後,去除葱薑,加適量的鹽及胡椒粉調味,加入太白粉水勾芡。
  7. 將整粒干貝、芥菜心、蕃茄及百合擺盤後,淋上干貝絲及芡汁即可食用。
