老許珍饌 ——富貴一品盅

說到山珍海味第一個想到的應該就是「鮑參翅肚」,指的就是鮑魚、海參、魚翅、魚肚(花膠)這四種頂級食材,常用於豐盛的酒席或高貴的美味珍饈。這道富貴一品盅,集合四大海味居首並富有「一口鮑魚一口金」之美譽的鮑魚,搭配香滑軟糯的海參,以及滋陰養顏的花膠於一盅,以最原始的烹調方式,保持食材本身的鮮味及營養,在家就能享用這道名貴的大菜。

食材

乾鮑或罐頭鮑魚4隻,花膠4隻,刺參4條,香菇8朵,紅棗8粒,竹笙6條,西生菜1棵,薑8片,蔥4支

蒸香菇料

醬油1湯匙,糖1茶匙,蔥、薑適量

調味料

高湯2杯,蠔油1湯匙,太白粉2湯匙,老抽4茶匙,米酒2茶匙,鹽適量

做法

  1. 將泡發好的鮑魚、刺參及花膠洗淨備用。
  2. 竹笙用水浸軟後切去蒂頭備用。
  3. 香菇洗淨,加水泡軟後去蒂,連同泡香菇的水一同放入碗中,加上蒸香菇料入鍋蒸30分鐘。
  4. 西生菜切大塊,加少許鹽川燙後盛出備用。
  5. 鍋裡燒熱油,爆香蔥段、薑片,加入蒸過的香菇炒香後,倒入蠔油、老抽及糖,炒出香氣,將海參、鮑魚及花膠入鍋,燒至上色,加入高湯後,淋酒,再加入竹笙及紅棗加蓋燜煮5-10分鐘至入味。
  6. 起鍋前加入適量胡椒粉提香,轉小火,加入太白粉水勾芡,盛入碗中,美味的富貴一品盅就完成了。
