老許珍饌 —— 祥瑞麒麟魚

麒麟乃是古代的仁獸,被尊為祥瑞之獸,更是我國上古人們最企望出現的吉祥之寶。

這道象徵祥瑞的清蒸麒麟魚,是將魚身以斜刀片開,加上火腿片、香菇片及新鮮花旗參片等食材互相交錯疊放,色彩鮮豔呈麒麟狀而名之。清蒸的麒麟魚肉質鮮香嫩滑,搭配火腿及冬菇的味道,層次分明,還有畫龍點晴的新鮮花旗參片,味道更加鮮美,是一道喻意吉祥的年節佳餚。

食材:

鱸魚或鱒魚1條(約2磅),新鮮花旗參1支,香菇10朵,火腿1塊,蔥1支,紅椒1個

醃魚料

蔥2支,薑2片,鹽1茶匙,酒1湯匙

做法

  1. 香菇洗淨,加水泡軟後去蒂,連同泡香菇的水一同放入碗中,加上醬油、糖及蔥薑入鍋蒸30分鐘,切斜片備用。
  2. 新鮮花旗參切片,火腿去皮切薄片備用。
  3. 將魚清理乾淨,用片刀將魚肉劃斜刀深入見骨,從頭到尾切好後,加入蒽、薑、鹽、酒抓勻拌醃15分鐘。
  4. 把事先準備好的新鮮花旗參片、香菇片及火腿片分別整齊鑲嵌在魚肉切縫中,成為麒麟片。
  5. 移入蒸盤中,放入蒸籠大火蒸12分鐘便可取出擺盤。
  6. 鍋中放入一湯匙油和一茶匙麻油,燒熱後加入蔥絲及紅椒絲略炒,最後淋在麒麟魚身上即可。
