老許珍饌 ——翡翠蘭花蝦

蘭花,通常用以象徵高潔典雅、堅貞不渝的精神,鄭板橋詩中有「千古幽貞是此花,不求聞達只煙霞」,並有「花中真君子,風姿寄高雅」的讚譽。

這道翡翠蘭花蝦以蘭花為原型,將大明蝦剖開做成蘭花狀,排列在滑嫩的干貝蒸蛋之上,好比一朵朵清麗脫俗的蘭花,蝦肉口感鮮甜,搭配翡翠般的西蘭花,讓人看了心曠神怡,是一道清爽的宴客佳餚。

食材

大明蝦10隻,青花菜1顆,北海道干貝4粒,雞蛋4個,高湯2杯,枸杞子適量

醃蝦料

酒1茶匙,鹽1茶匙,太白粉適量

做法

  1. 30分鐘,取出後撕成絲備用。
  2. 將蛋打散後,加入3倍的高湯、干貝絲及適量的鹽調味,攪拌均勻後,倒入大的深盤中,上鍋蒸10分鐘。
  3. 用刀切開蝦背取出沙筋,蝦肉剖成雙飛片,再在腹部中央劃一小口,然後將蝦尾從背部中央切口處穿出成蘭花狀,再以適量的鹽、酒、太白粉拌醃10分鐘。
  4. 青花菜撕成小朵,放入開水中加少許鹽,燙10秒鐘立即取出備用。
  5. 將蝦、青花菜一同排放在蒸蛋盤中,加蓋續蒸6-10分鐘出鍋。
  6. 爆香蔥薑,下干貝絲煸香,淋入米酒熗鍋後,加入蒸干貝的高湯,煮開後取出葱薑,用太白粉水勾芡後淋入盤中,最後灑上枸杞子即可上桌。
