老許珍饌 ——竹爆平安

「竹報平安」這一成語,出自《酉陽雜俎續集·支植下》,意為舊時報平安的家書,現在則成為新春期間,時常會用的吉祥賀詞。在此歲末之時,做一道以「豬」的梅花肉與原隻「鮑」魚為食材,取其諧音而命名的「竹報平安」,真是再合適不過了。

這道菜將梅花肉與鮑魚同燒,兩種食材相輔相成,梅花肉吸收鮑魚的鮮味,嫩中帶一點咬勁,鮑魚則因梅花肉更加鮮甜,是最絕妙的搭配,上碟時將梅花肉切成十大片,十隻鮑魚一字排開,更顯富貴,是年節團圓桌上象徵十全十美的吉祥佳餚。

食材:

梅花肉3磅,鮑魚10隻,青江菜12支,蔥10支,薑3片,八角2個,水3杯

調味料

冰糖3湯匙,酒1/3杯,醬油1/2杯

做法

  1. 梅花肉洗淨,用棉繩將整條梅花肉綁好定型。
  2. 鍋中放2湯匙油,燒熱後,放入10支蔥及薑爆香,再加入八角、冰糖炒出糖色後,淋入醬油及酒,煮滾後,將梅花肉放入鍋中,讓肉均勻的沾裹上色,呈現出漂亮的琥珀色。
  3. 加入鮑魚及3杯高湯大火煮滾後,轉中小火續煑2小時,其間可將梅花肉翻面,燒至肉熟入味。
  4. 起鍋後先去除棉繩,再將肉切成10片排入盤中,再將10隻色澤金黃的鮑魚,圍著盤邊呈半圓形擺入。
  5. 鍋中倒入適量的油,放入青江菜翻炒,加入適量的水,加蓋燜煮1分鐘,即可盛出排入大盤中圍邊裝飾,最後淋上紅燒滷汁,一道象徵十全十美的菜式就完成了。
