蒜頭蛋花參雞湯

進入十月份,也迎來了深秋的節令「寒露」,由於天氣轉涼,夜晚水氣凝結成露,忽然吹起的冷風,常引發感冒著涼,所以記得出門多加件保暖衣物。其實秋高氣爽,最適合進行登高遠足,又可毀鍊身體,令人心曠神怡,是這段時節最佳的活動。隨著流感季節將至,除了接種流感疫苗以外,我們也可以在飲食養生方面多下工夫,以免感冒或流感找上門。

在此秋燥時節的飲食養生,應以柔潤為宜,本期小廚為大家介紹一 道抵抗流感來襲時最好的暖湯蒜頭蛋花參雞湯,這道湯品不僅備料簡單,烹煮也很容易。食材中的蒜頭和花旗参可以增強人體免疫力,和雞湯燉煮不但補中益氣,還可增加血液循環,燉煮完成的雞湯甘醇順口,不僅少了大蒜本身的哈味,還可以吃到大蒜精華,是一道營養豐富又美味的湯品,非常適合在餐桌上跟家人一起分享。

食材

新鮮雞1隻、蒜頭5顆、新鮮花旗參3-5支或花旗参片15克、雞蛋2顆

做法:

1. 全雞用熱水汆燙後,撈起洗淨備用。

2. 蒜頭去膜備用。

3. 將全雞、新鮮花旗參及蒜頭放入深鍋中,加水淹過食材,大火煮開後轉小火燉煮2小時。

4. 關火之前打入整顆雞蛋煮成蛋包,或將雞蛋液均匀地淋入鍋中即成綿密的蛋花,最後加入適量的鹽調味即可上桌。

溫馨提示:

• 也可使用電鍋燉煮,將食材放入電鍋中,外鍋2杯水,按下開關,開關跳起即完成。

• 電鍋燉煮,蒜頭較能保有完整外型。

• 喜歡濃郁的湯頭,可將蒜頭先煸香再入鍋煮,可使雞湯的香氣更馥郁濃厚,煽香的蒜頭經過燉煮,較不易破碎而讓湯變得混濁。

• 喜歡湯頭清淡,蒜頭可免除去皮處理。
