老許珍饌 ——如意南瓜盅    

十月又到了南瓜展露頭角的時候,金黃甜軟的南瓜是秋天的當令食材,除了萬聖節可以做些應景美食之外,本身也是健康的高纖食材,可以變化成各式料理。這道如意南瓜盅是以南瓜作為容器,選用牛肋條為主要的食材,加入新鮮花旗參及其他藥材原盅上爐蒸煮。在蒸煮的過程中,南瓜釋出的鮮甜味和牛肉融合在一起,讓牛肉帶有南瓜的香甜,而南瓜也吸收了牛肉的油脂,風味清甜細膩,湯汁中還帶有花旗參的香氣及回甘味,讓味道更加豐富。

食材

牛肋條1磅,南瓜1個,新鮮花旗參1-2支,蜜棗2個,枸杞2湯匙,淮山50克,蔥2支,薑2片,高湯2杯

調味料

酒2湯匙,鹽1茶匙

做法

  1. 將南瓜頂部切開,可當成盅蓋,再將瓜囊挖去備用。
  2. 牛肋條切成小塊,在滾水中燙煮1分鐘左右去除血水,撈出後洗乾淨放入南瓜盅內。
  3. 再依序將淮山、蜜棗、蔥段、薑片及新鮮花旗參全部放入南瓜盅,最後加入枸杞子。
  4. 加入高湯兩碗,淋入米酒,蓋上南瓜盅蓋,放入蒸籠內,水滾後,大火蒸一個小時即可。
