新鮮參燒酒蝦

時序進入年末,天氣也愈趨寒冷,除了各種保暖措施紛紛出籠之外,總是想要吃點熱呼呼暖身的料理,其中既能補身又能暖胃的麻油料理,絕對是冬季的首選。今天小廚要和大家分享一道香氣十足、做法簡單的新鮮參燒酒蝦。肥美彈牙的蝦肉滲入濃郁的麻油香與米酒烹煮過後的香氣,再結合新鮮花旗參的回甘及中藥材的精華,是補氣、溫補身體的最佳料理。新鮮參燒酒蝦的湯汁也可以拿來拌麵線、或是白飯,在冷冷的冬天吃上一碗,好吃暖胃又補身喔!

食材:

活蝦或白蝦、米酒、麻油

中藥材:

新鮮花旗參、蜜棗、當歸、黨參、黃耆、枸杞

做法:

1. 將蝦剪除觸鬚,並用牙籤剔除腸泥,洗淨備用。

2. 所有中藥材加水燉煮20分鐘。

3. 在砂鍋中燒熱麻油,放入蝦略微翻炒後,加入燉煮好的藥材湯料。

4. 煮滾後,加入米酒及枸杞再次煮滾,即可趁熱食用。

溫馨提示:

1. 用全酒煮燒酒蝦時,將鍋中的酒燒滾,轉小火,鍋內用打火機點火燃燒,酒精燃燒完畢火就會熄滅,酒味還是很濃郁。

2. 蝦子要避免久滾,所以加水煮滾後就要關火,以保持Q彈的口感。
