百頁新鮮參肉捲

剛過完感恩節及聖誕誔節這二大節日,大家在享用了不少豐富的美酒佳餚之後,一般會想要吃一些比較清淡的食物,因此,今天小廚特別為大家介紹一道好吃又簡單的清蒸菜式百頁新鮮參肉捲。吃過上海菜的朋友對百頁一定都不陌生,其中百頁包肉是上海及江南地區一道典型的家常菜,這次小廚特別在肉餡中加入新鮮花旗參絲,清蒸後,百頁軟嫩、肉餡鮮香多汁,口感清甜中透著鮮香,而且營養豐富、原汁原味,也是一道下飯的好菜,非常適合口味偏清淡的家庭食用。

食材:

新鮮花旗參1支、百頁1包、絞肉1磅

調味料:

雞蛋1顆、醬油1小匙、鹽1/3小匙、麻油1小匙、酒、蔥1支、薑1片、太白粉1茶匙、胡椒粉少許

做法:

1. 花旗參切絲備用。

2. 温水中加入小蘇打粉調勻,放入百頁浸泡至變白變軟後,漂洗浸泡擠乾水份備用。

3. 絞肉放在砧板上,分次加入蔥薑水,用菜刀再剁到有粘性後,放在大碗中,加入雞蛋、麻油、鹽、胡椒粉、醬油、酒及太白粉拌勻,接著以順著一個方向攪拌至牽絲起筋即可。

4. 取一張百頁,將肉餡舖平,新鮮花旗參絲舖在中間,包捲成長條狀,全部捲好後,接口朝下放入蒸盤,入蒸鍋蒸10分鐘。

5. 蒸好後,取出切成小塊,排入盤中即可上桌。

溫馨提示:

百頁新鮮參肉捲蒸好後,盤中會有湯汁,吃的時候浸在湯汁中或切段後淋上湯汁會更好吃。
