新鮮參希臘沙拉

因為疫情問題,大家無法到餐廳享受美食,外食的機會也都大大減少,在家做飯已成生活常態,長期宅家料理三餐的煮婦煮夫們,廚藝是否都精進了不少呢?是否已經煮到没靈感了呢?參活小廚特別製作一系列西式餐點,讓大家可以換換口味。

西式餐點系列II小廚要和大家分享一道好吃、營養又健康的沙拉:新鮮參希臘沙拉。製作這道沙拉,主要以希臘優格取代常採用的橄欖油,加上花旗參粉所特調出來的沙拉醬,吃起來口感綿密、香滑,用來拌新鮮的生菜或佐以海鮮及雞肉,不但非常地清爽美味,同時也讓您吃得更健康喔!

食材:

綜合生菜 (Spring Mix)、羅曼生菜、球形萵苣、苦苣生菜 (Frisée Lettuce)、櫻桃蕃茄、各色甜椒、新鮮蘑菇、紫洋蔥絲、紫包心菜、花旗參、香菜、奇異果、蘋果、草莓、藍莓、紅莓、雞蛋。

沙拉醬:

希臘優格1碗、花旗參粉1茶匙、新鮮參絲2湯匙、黃瓜絲半碗、櫻桃蕃茄5粒、香菜、鹽及胡椒粉各少許。

做法:

1. 各種生菜洗淨瀝乾水份後切成小片,黃瓜、紫洋蔥、紫包心菜、新鮮花旗參切絲,各色甜椒及新鮮蘑菇切片,香菜切段備用。

2. 各式水果洗淨瀝乾水份,草莓、奇異果、蘋果、櫻桃蕃茄切片,雞蛋煮熟去殼用切蛋器切片備用。

3. 將希臘優格、花旗參粉放入碗中,加少量的鹽和胡椒粉,用電動打蛋器打至非常細滑。

4. 加入花旗參絲2湯匙、黃瓜絲半碗、櫻桃蕃茄片、香菜攪拌均勻成沙拉醬。

5. 先將綜合生菜放在大沙拉碗中,再將其他食材舖放在碗中,在最上層灑上香菜及新鮮花旗參絲,最後淋上沙拉醬拌勻即可享用。

溫聲提示:

希臘優格源自於地中海地區,是一般家庭會食用的傳統酸奶。蛋白質、鈣質大約都是一般優格的2倍左右,而碳水化合物(乳糖)及脂肪含量卻較低,且含鈉量更少,加上因為口感濃密、黏滑,吃起來更有飽足感,種種益處使得希臘優格成為減重者熱愛的食物。
