新鮮花旗參蜜片法式焦糖布丁

因為疫情問題,大家無法到餐廳享受美食,外食的機 會也都大大減少,在家做飯已成生活常態,長期宅家料理三餐的煮婦煮夫們,廚藝是否都精進了不少呢?是否已經煮到沒靈感了呢:參活小廚特別製作一系列西式餐點,讓大家可以換換口味。

西式餐點系列5小廚要和大家分享的是甜點:新鮮參蜜片法式焦糖布丁。這是一道經典的法式甜點,奶香濃郁,口感細膩、柔滑。做法也超簡單,是下午茶及飯後甜點的首選,吃的時候,用小勺子輕敲表面的那層焦糖,就可吃到細膩嫩滑、層次豐富的布丁,以及蜜片帶來令人驚艷的口感,令人回味無窮!

食材:

許氏花旗參粉、新鮮花旗參蜜片50 克、蛋黃6個、糖半杯 、香草1支、鮮奶油(whipping cream)2杯

做法:

1. 將2杯鮮奶油倒入小鍋中,香草莢剖半以刀背刮出香草籽,和香草莢一起放入鍋中,用小火煮至鍋邊微微起泡,下少許鹽,即可熄火,靜置放涼。

2. 大碗中加入6個蛋黃和半杯糖,用電動打蛋器打勻。

3. 將已略涼的香草鮮奶油過篩,分次慢慢倒入蛋糖糊中,攪拌均勻。

4. 先在每個烤杯中分別加入數片新鮮參蜜片,再將布丁蛋液倒入。

5. 烤杯排入已裝有熱水的深盤中,移入已預熱至華氏325度的烤箱中,隔水烤20-25分鐘即可。

6. 取出烤好的布丁,在室溫放涼後,放入冰箱冷藏2小時以上。

7. 要吃的時候,從冰箱取出,在布丁表面加上1-2片的新鮮參蜜片後,再均勻撒上一層適量的白砂糖。

8. 最後用噴火槍 (torch) 在布丁的表面噴燒,把砂糖燒到金黃色,靜置至焦糖變硬就可以享用了。

溫馨提示:

1.用香草莢做出來的布丁味道香醇,如果沒有香草莢,也可以用香草精代替。

2. 根據所用容器和烤箱溫度調整時間,一般看到布丁表面出現焦糖色即可,如果時間過長,布丁的口感會不夠滑嫩。
