洋蔥燴豬排

因為疫情問題,大家無法到餐廳享受美食,外食的機會也都大大減少,在家做飯已成生活常態,長期宅家料理三餐的煮婦煮夫們,廚藝是否都精進了不少呢?是否已經煮到没靈感了呢?參活小廚特別製作一系列西式餐點,讓大家可以換換口味。

西式餐點系列VI小廚要介紹一道主菜:洋蔥燴豬排。這是一道美味又開胃的菜,事先拍鬆煎香的豬排,鹹香入味,搭配炒過後釋放出的甜味的洋蔥,以及微酸的蕃茄醬,完美的搭配,入口肉質爽滑又甘香,實在令人無法抗拒。

食材:

大排骨肉5片、洋蔥1顆、新鮮蘑菇10朵、小胡蘿蔔1杯、 香菜1小把、麵粉半杯、水1杯。

醃肉料:

鹽1茶匙、胡椒粉1/4茶匙、酒1湯匙

做法:

1. 洋蔥橫紋切絲、新鮮蘑菇切片備用。

2. 豬排洗淨,抹乾水份,用刀背或肉錘拍打,把肉筋拍斷、肉質紋理拍鬆,加入醃料拌勻,醃約15分鐘,兩面各沾裹麵粉備用。

3. 燒熱油3湯匙,以半煎炸的方式,將豬排煎至兩面金黃,盛出待用。

4. 原鍋倒入洋蔥爆香後,放入胡蘿蔔及蘑菇一起炒香,再加入蕃茄醬3湯匙,以中火慢慢煨煮至香味透出。

5. 接著放入豬排拌炒均勻,加入1杯水及適量的鹽、糖調味, 用中火煨煮10-15分鐘,煨煮過程中要翻動1-2次,燒至食材熟透及湯汁稍微收乾即成。
