乾燒珊瑚蝦

家常菜系列3,為大家分享一道老少皆宜的乾燒珊瑚蝦,這道菜的做法非常簡單,我們用所採用的是新鮮珊瑚蝦,蝦頭飽含豐富蝦膏,蝦肉清甜Q彈,裹著香甜帶些微辣的醬汁,色澤紅亮,令人胃口大開,吮指回味,絶對是飯桌上的白飯殺手!

食材:

珊瑚蝦8隻、洋蔥1個、青蔥1把、薑末半湯匙、大蒜1湯匙、蕃茄醬2湯匙、辣豆瓣醬1茶匙、甜酒釀1湯匙、鹽半茶匙、糖1茶匙、太白粉1湯匙、麻油1/4茶匙。

做法:

1. 將珊瑚蝦洗淨後,用剪刀剪去尖頭及鬚脚部分,再剪開背部挑去腸泥,洗淨瀝乾水份備用。

2. 大蒜切片、洋蔥切絲,青蔥及生薑切末。

3. 鍋熱後加油2湯匙,加入洋蔥絲、蔥白、薑未及蒜片爆香,接著放入珊瑚蝦煎至外表香酥。

4. 接著加入蕃茄醬、辣豆瓣醬及甜酒釀炒香,加入少許麻油、糖及鹽調味。

5. 燒至醬汁略微收乾,轉小火,加入太白粉水勾一層薄芡,最後灑上蔥花,即可盛盤上桌。
