鮮參吉祥炒米粉

家常菜系列5,分享一道特別版的台式炒米粉~鮮參吉祥炒米粉,台式炒米粉一直是非常受歡迎的經典台式美食,是逢年過節餐桌上常會出現的料理,看似簡單的炒米粉,要炒出口感Q彈又不會太乾,適合老人家和小朋友吃的炒米粉,就得下一番功夫了。

今天分享的炒米粉,在處理米粉時,捨棄傳統先燙後炒的方式,改為先蒸後拌;食材方面則特別加入北海道干貝和新鮮花旗參絲,果然炒出來的米粉香氣十足、Q彈、不乾澀,口感更是一級棒喔!

食材

新竹米粉1包 (14盎司)、新鮮花旗參1支、北海道干貝5粒、蟹肉棒12條、唐芹5支、杏鮑菇1支、蔥1支、胡蘿蔔1支、醬油1湯匙、鹽1/2茶匙、胡椒粉少許、高湯1碗

做法

1. 北海道干貝加水泡軟,連同泡干貝的水一同放入蒸鍋中蒸軟,撕成細絲備用。

2. 米粉用冷水泡軟,瀝乾備用。

3. 新鮮參、唐芹、紅蘿蔔、杏鮑菇切絲,蟹肉棒撕成細條狀備用。

4. 鍋熱加油2湯匙,爆香蔥段,將新鮮參及干貝加入鍋中炒香後,先撈出一半,再加入紅蘿蔔絲、芹菜絲及杏鮑菇絲等材料翻炒均勻。

5. 接著加入蟹肉棒炒勻後,下醬油、胡椒粉及鹽調味後,加入干貝水及高湯煮滾,放入米粉,與湯汁及料充分拌勻。

6. 將拌好的米粉連同湯汁一同移到蒸鍋中,表面舖上預留的花旗參絲、干貝絲、蟹肉棒及唐芹,蒸10-15分鐘即可盛盤上桌。
