滑蛋牛肉

家常菜系列6,分享一道蛋白質滿滿的家常菜~滑蛋牛肉,這道菜的食材及做法都非常簡單,只要掌握滑蛋的要領,蛋液及火侯配合,使得底層蛋液是凝固的,呈美麗的金黃色,最上層的蛋汁將凝未凝,再搭配味道飽滿、鮮滑軟嫩的牛肉,以及口感清脆回甘的新鮮花旗參絲,讓這道非一般的滑蛋牛肉蛋香濃郁、嫩滑多汁、口感層次豐富、令人驚艷,絶對是餐桌上最受歡迎的料理。

食材:

牛肉半磅、花旗參1支、蛋6粒、蔥2支、薑2片、鹽少許 醃肉料: 醬油1湯匙、酒1/2湯匙、糖1/2茶匙、小蘇打1/4茶匙、太白粉1湯匙、薑 2片

做法:

1. 花旗參切絲、蔥斜切成蔥段、薑連皮切片備用。

2. 牛肉逆紋切成約3公分大小的片,加入醃肉料拌勻,再加入少許薑片醃至入味。

3. 蛋加少許鹽打勻備用。

4. 在鍋中將1杯半的油燒熱,放入醃好的牛肉以大火過油至6分熟,撈出瀝油,趁熱倒入蛋汁中拌勻。

5. 炒鍋中燒熱3湯匙油,放入蔥段及薑片爆香,倒入牛肉蛋汁,等蛋汁稍稍定型後,用鍋鏟慢慢滑動蛋汁,至蛋汁下層全熟、中層七分熟即可關火。

6. 最後灑上新鮮參絲即可起鍋盛盤。
