新鮮參醬爆雞丁

家常菜系列7,為大家分享一道醬香濃郁的家常菜~新鮮參醬爆雞丁,將甜麵醬經過熱油爆炒後,帶出濃厚的醬香氣鹹中帶甜,,再與過油後滑嫩的雞丁,以及洋葱、黃瓜、紅椒、新鮮花旗等配料同炒,這道雞肉軟嫩、醬香濃郁、口感及味道一級棒的新鮮參醬爆雞丁就完成了!做法超簡單、超下飯,而且很適合當便當菜,再加熱也還是非常好吃喔!

食材:

雞上腿2磅、新鮮花旗參1支、黃瓜1條、洋蔥1個、紅辣椒2支、蔥1支、蒜頭3粒、甜麵醬1湯匙、辣豆瓣醬1茶匙、糖1茶匙、麻油1/2茶匙、醬油1湯匙、太白粉1湯匙

做法:

1. 雞上腿去骨,切成四方小丁狀,加醬油及太白粉拌勻,醃製約20分鐘。

2. 新鮮參切丁、洋蔥切塊、黃瓜切滾刀塊、紅辣椒去籽切丁、蔥切段、大蒜切片備用。

3. 鍋熱後下2杯油,油熱後,將雞丁下鍋大火過油,盛出瀝油備用。

4. 鍋中燒熱2湯匙油,爆香蔥段、蒜片及洋蔥,加入甜麵醬及少許辣豆瓣醬炒香,再加入紅辣椒丁、糖及醬油翻炒至香味四溢。

5. 倒入雞丁炒香後,加入黃瓜及花旗參丁以大火翻炒均勻,最後淋下少許麻油裝盤即成。
