新鮮參雙色蝦仁

炎炎夏日,又到了吃蝦的好季節,今天小廚為大家介紹一道營養又美味的家常菜~新鮮參雙色蝦仁。主要食材中彈牙脆口的蝦仁,搭配補氣去燥、口感清脆回甘的新鮮花旗參,一蝦兩吃,對於夏季食慾減退的朋友來說,絶對是一道清爽又開胃的美味佳餚。大家不妨趕快動手試試,保證讓家人對您的手藝讚不絶口!

食材:

蝦仁1磅、新鮮花旗參1支、青豆1/2杯、胡蘿蔔丁1/2杯、玉米粒1/2杯、蔥花1茶匙、鹽1/2茶匙、麻油1/2茶匙、蕃茄醬2湯匙、糖少許、高湯2湯匙、柳橙1個 醃蝦料: 鹽1/2茶匙、太白粉1/2湯匙

做法:

1. 新鮮參切小丁備用。

2. 蝦仁挑去腸泥,加鹽水洗淨瀝乾後,用醃蝦料拌勻備用。

3. 起油鍋,倒下蝦仁快速過油後,迅速撈取出瀝油備用。

4. 爆香蔥花,依序加入新鮮參丁、胡蘿蔔丁、玉米粒、蝦仁及高湯炒拌至熟,取出一半盛入盤中。

5. 另一半蝦仁,加入蔥花、青豆仁、蕃茄醬及糖拌炒均勻,最後滴上麻油即可盛盤。

6. 擺盤時,兩種蝦仁中間以新鮮柳橙片裝飾,一蝦兩吃,好吃又美觀。
