新鮮參京醬肉絲捲餅

今天小廚要為大家介紹一道好吃又特別的新鮮參京醬肉絲捲餅,京醬肉絲是道地的北方菜,醬香濃郁、鹹甜適中,加入新鮮花旗參絲之後,多了一份清香爽脆的口感。除了是一 道殺手級的下飯菜之外,還可以選用自製或現成的薄餅,包入青瓜絲、蔥絲及新鮮參京醬肉絲做成捲餅,一口咬下去,滿滿的幸福感,絕對過癮!

食材:

豬里脊肉1磅、新鮮花旗參1支、杏鮑菇2支、蔥6支、甜麵醬2湯匙、醬油1湯匙、糖2茶匙、高湯1/2杯、墨西哥薄餅(Tortilla)

醃肉料:

醬油1湯匙、水2湯匙、太白粉1湯匙

做法:

1. 新鮮花旗參、杏鮑菇、青蔥切絲備用。

2. 豬里脊肉切絲,放入碗中,加醃肉料拌勻。

3. 熱鍋後,加入2杯油,將肉絲過油炒至變色,倒出瀝油備用。

4. 利用鍋中的底油,放入蔥絲爆香,再加入甜麵醬、醬油、糖及高湯炒到有醬香。

5. 依序放入肉絲、杏鮑菇絲、新鮮參絲及蔥絲炒至所有食材都均勻地裹上醬汁。

6. 最後灑上炒香的白芝麻即成。

7. 取一片墨西哥薄餅,在餅皮1/3處放上京醬肉絲,將餅皮捲起即可食用。

8. 捲餅內餡除了京醬肉絲之外,還可依個人喜好加入葱絲或小黃瓜絲一同捲食,口感更佳。
