鮮參翡翠如意捲

前菜是正餐中的第一道食物,在主菜之前上,搭配餐前酒,可以起到開胃的作用,在不同的國家或地區的前菜,可是都有不同的講究喔!參活小廚特別製作一系列的前菜,讓大家可以在吃正餐之前或只想吃點小食時,有更多的選擇。

前菜系列I,小廚要為大家介紹的是~鮮參翡翠如意捲。這是一道清爽的前菜,特別加了新鮮花旗參絲,口感清淡爽口,而具有獨特的風味,搭配濃香的芝麻沾醬不但清爽開胃,而且健康無負擔,特別適合夏季食用,想要纖體瘦身的朋友,千萬不要錯過喔!

食材:

新鮮花旗參2支、油麥菜1把、大黃瓜1條、胡蘿蔔2條

芝麻沾醬:

芝麻醬1湯匙、麻油1湯匙、醬油1湯匙、醋1茶匙、蒜泥1湯匙、糖1茶匙、鹽少許、美乃滋 (蛋黃醬) 1湯匙

做法:

1. 新鮮花旗參及胡蘿蔔切細絲。

2. 大黃瓜切去頭尾,利用刨刀直刨成長片。

3. 油麥菜洗淨,瀝乾水分,每支切段成為一小把。

4. 加上花旗參絲及胡蘿蔔絲碼放整齊,用寬大的油麥菜葉包捲定型。

5. 再用黃瓜長片攔腰捲住油麥菜捲,並且用竹籤固定,營養又美觀鮮參翡翠如意捲就完成了。

6. 取一個小碗,放入芝麻醬及等量的麻油調開後,再加入醬油、醋、蒜泥、鹽、糖調勻,最後加入沙拉醬拌勻,就是百搭的芝麻沾醬。

7. 鮮參翡翠如意捲排入盤中,將調好的芝麻沾醬放在小碗中,以供沾食。
