干貝海參雪裡紅粥

古人視粥為食療聖品,用來補氣滋養腸胃、緩解便秘及提升身體抵抗力。也是亞洲人喜愛的家常料理,除了華人愛喝粥,在日本、韓國家庭的餐桌上也經常可見。

今天小廚為大家介紹一道暖胃粥品-干貝海參雪裡紅粥。 眾所皆知,一碗好的粥,除了要色、香、味俱全,更要起到養精、氣、神作用,這道干貝海參雪裡紅粥以北海道干貝熬煮的粥底,入口香滑綿密、鮮味十足,加上肉質Q彈細膩的刺參,每一口都是滿滿的膠原蛋白,起鍋前再加入的雪裡紅,青翠又開味,絶對是一道令人食慾大開的養生靚粥。

食材:

北海道干貝4顆、地中海刺參3條、瘦肉半磅、雪裡紅半碗、白米、薑3片、雞蛋1顆、海鹽及胡椒粉適量

醃肉料:

米酒、鹽、胡椒粉、太白粉

做法:

1. 干貝略為沖洗放在碗中,加水泡軟拆絲備用。

2. 泡發好的刺參去除內臟洗淨後,切成寛絲。

3. 瘦肉逆紋切絲,加入醃肉料拌勻,醃至入味。

4. 大湯鍋中注入適量的清水,下薑片及干貝絲煮沸後,加入白米略為攪拌,以大火煮滾,蓋上蓋子,以中小火繼續煮20-30分鐘。

5. 打開鍋蓋後,加入肉絲、海參及雪𥚃紅攪拌均勻後,加入適量的鹽及胡椒粉調味。

6. 最後,打入一個蛋花,熱呼呼的干貝海參雪裡紅粥就完成了。
