新鮮參燴海參

一年一度的中秋佳節就快到了,小廚特別為大家準備一道適合閣家團圓的宴客菜~新鮮參燴海參。 這道菜所選用的地中海刺參,含有豐富的高蛋白質及膠質,同時低脂肪、低膽固醇,經常食用有增強扺抗力、補腎益精、保青春等作用。搭配新鮮花旗參燴煮入味,除了可吃到刺參彈牙軟滑的口感之外,還有清脆回甘的新鮮花旗參獨有的回甘參香,尤其在起鍋前加入幾滴畫龍點精的花椒油,所散發出的獨特香氣,絶對令人回味無窮喔!

食材:

地中海刺參半磅、新鮮花旗參1支、乾香菇10朵、紅蘿蔔1杯、豌豆莢1杯、蒜末1湯匙、薑6片、蔥2支、高湯1杯

調味料:

蠔油1湯匙、醬油1湯匙、香油1茶匙、米酒2湯匙、糖1茶匙、花椒油少許

做法:

1. 新鮮花旗參切片;泡發好的刺參去除內臟洗淨後,斜刀切塊備用。

2. 豌豆荚去蒂撕除側面的纖維,並在兩端剪出燕尾型;胡蘿蔔去皮切滾刀塊,川燙備用。

3. 香菇洗淨,加水泡軟後去蒂,連同泡香菇的水一同放入碗中,醬油、蔥、薑及糖入鍋蒸10分鐘至入味。

4. 起油鍋,放入蔥段、薑片爆香,再加入蒜末炒香,接著放入蠔油、糖及醬油拌炒均勻。

5. 依序放入香菇、胡蘿蔔、海參及花旗參片略炒,淋酒後,加入碗豆莢及高湯加蓋煮至入味。

6. 開蓋後,淋入少許花椒油並加入適量的太白粉水勾芡,最後可依個人喜好加上少許香油,即可盛盤上桌。

如何自製花椒油:油燒熱,先爆香蔥、薑,再加入花椒粒以小火略微爆香即成。
