干貝筒仔米糕

糯米具有補中益氣,健脾養胃的功效,是日常飲食中經常見到的食材之一。其中筒仔米糕是在台灣各地常見的糯米類小吃,與油飯類似,但卻是在竹筒或鐵罐中炊煮而成,入口香軟Q彈、味道濃郁,深受大家喜愛。

今天小廚就為大家介紹這道香Q可口的『干貝筒仔米糕』。小廚特別在食材中加入北海道干貝來增加鮮味,所有食材與干貝絲的鮮甜滋味相結合,搭配口口Q彈的糯米,香味濃郁,口感層次分明。食用時將米糕扣在碗中,淋上醬汁,濃濃的古早味,讓人忍不住一口接一口,無論當成小吃或主食都非常適合。

食材:

長糯米3杯、水2杯、麻油1茶匙、鹹蛋黃、滷肉燥、乾香菇6朵、干貝4顆、酒1湯匙、紅蔥酥2湯匙、醬油3湯匙、醬油膏、紅蔥酥醬、糖少許、鹽少許、白胡椒粉1/8茶匙、香菜、薑末、蒜末

做法:

1. 3杯長糯米洗乾淨,加2杯水浸泡30分鐘。

2. 北海道干貝加水泡軟,連同泡干貝的水一同放入蒸鍋中蒸軟,撕成細絲備用。

3. 香菇泡軟去蒂切絲,鹹蛋黃切成兩半備用。

4. 起油鍋,爆香薑末及蒜末,放下香菇絲、干貝絲炒香後,加入紅蔥酥醬、醬油爆香,再下少許糖、紅蔥酥、麻油、白胡椒粉及1湯匙肉燥炒香。

5. 放入瀝乾水份的糯米拌炒均勻,淋酒及調味後,加入泡糯米水拌炒均勻。

6. 米糕模型中均勻抹上少許油,在底部放入干貝絲、滷肉燥及鹹蛋黃,再把炒好的糯米料填入模型中,排入蒸鍋中蒸30分鐘。

7. 蒸好的米糕倒扣在盤中,可依個人喜好淋上醬油膏或甜辣醬,最後灑上香菜便可趁熱食用。
