啫啫芋頭雞煲

中秋過後,秋風起,天氣也開始慢慢轉涼。熱氣騰騰、香濃惹味的煲仔菜將會是飯桌上最愛歡迎的佳餚。今天小廚為大家介紹一道做法簡單的暖身煲仔菜~啫啫芋頭雞煲。啫啫雞這個有趣名字的由來,是因為食材在瓦煲中高溫烹煮時,煲中的湯汁不斷快速蒸發,而發出「啫啫咋咋」的聲音而得名。

啫啫雞煲屬於傳統粵菜,一般在大排檔或是酒家都可以吃得到,也是秋冬必吃的暖身煲仔菜之一。在烹煮啫啫雞煲時,食材可以依照自己的喜好做變化。大家只要跟著小廚的步驟,今年的秋冬,在家也能享用香味撲鼻、味道鹹鮮好下飯、大排擋風味十足的煲仔菜喔!

食材:

去骨雞腿肉2隻、新鮮參1支、乾香菇6朵、小芋頭10顆、蔥3支、薑6片、蒜頭6粒、洋蔥1個、蠔油1湯匙、醬油1湯匙、紹興酒1湯匙、糖1茶匙、水1/2杯

醃雞料:

醬油1湯匙、太白粉1湯匙

做法:

1. 雞腿肉切塊,用醬油、太白粉醃10分鐘入味。

2. 新鮮花旗參切片,小芋頭蒸熟去皮,乾香菇泡軟,洋蔥切塊。

3. 油在鍋中燒至8分熱,將雞腿肉下鍋過油,盛出瀝油備用。

4. 燒熱2湯匙油,爆香蔥、薑、蒜,放入洋蔥炒至半透明狀,加入香菇、新鮮參拌炒均勻。

5. 接著加入蠔油、糖、酒、醬油炒香後,再加入雞肉、芋頭及適量的水拌炒至香味四溢。

6. 砂鍋在爐子上加熱,鍋底放上1湯匙油,待油燒熱後,將做法5的所有食材倒入燒熱的砂鍋中,待砂鍋中發出啫啫響聲,即可趁熱上桌。
