人中之龍鳳尾蝦

馬上就要過年了,一定要親手料理一桌寓意吉祥的年菜,為全家人帶來平安如意的好兆頭。許氏參活小廚特別製作「年菜系列」,和大家分享幾道過年必備的澎湃菜餚,千萬別錯過了喔!

年菜系列一,小廚要為大家介紹的這道年菜是人中之龍鳳尾蝦。首先在盤中放置由馬鈴薯泥和萵苣筍做成白綠相間的小圓塔,再將炸得金黃酥脆的鳯尾蝦置於塔頂,令盤中的主角更加立體,周圍再隨意搭配各式新鮮生菜及水果,則能充份展現出「龍鳳呈祥」的華麗感。相信這道以炸物為主的前菜,一定能得到一家大小的青睞。

食材:

新鮮花旗參1支、北海道干貝4粒、大蝦4隻,馬鈴薯1個、萵苣筍2支、什錦生菜1碗、各式水果、牛油、雞蛋、麵粉、太白粉、胡椒粉、海鹽

做法:

1. 新鮮參切細絲;北海道干貝加水泡軟,放入蒸鍋中蒸30分鐘,撕成細絲備用。

2. 馬鈴薯去皮蒸熟壓成泥;萵苣筍去皮切絲,用少量鹽拌醃出水後,擠乾備用。

3. 大蝦去頭、去殼、留尾、開背去腸泥,均勻撒上太白粉備用。

4. 碗中加入雞蛋、麵粉及水攪拌均勻,加少許海鹽調味成為蛋麵糊。

5. 大蝦依序沾裹上蛋麵糊、花旗參絲及干貝絲,與蝦頭一同入熱油中炸成金黃色即可瀝出。

6. 馬鈴薯泥加牛油、海鹽、胡椒粉拌勻,與萵苣筍絲分別塞入圓形模具中壓緊,脫膜後放入盤中。

7. 最後,將炸蝦及蝦頭置於圓頂之上,周圍可隨意搭配什錦生菜及各式水果一同享用。
