韓式海鮮煎餅

許氏參活小廚~開灶囉!

在韓國,逢年過節時,家家戶戶會做韓式煎餅祭祖,平日裏也會將韓式煎餅當點心食用。現在的韓式煎餅,已經成為街知巷聞的韓國美食,因此,每次去韓國餐館,都會想點份韓式煎餅大家一起分享。

今天就讓小廚和大家分享這道好做又好吃的韓式海鮮煎餅詳細的做法吧!韓式海鮮煎餅自己動手做一點也不難,食材的搭配非常有彈性,材料親民隨手可得。如果手邊沒有現成的韓式煎餅粉也沒關係,只要依照食譜中的做法,準備好各式海鮮及蔬菜,自己在家就能煎出料多味美、鮮香酥脆的韓式煎餅囉!

食材:

南美海參絲、許氏海輪牌澳洲鮑魚、什錦海鮮(魚肉、蝦仁、魷魚圈)、洋蔥、香菇、韭菜、高麗菜、胡蘿蔔、青蔥

麵糊:

中筋麵粉300公克、糯米粉150公克、泡打粉1茶匙、雞蛋2個、水450毫升、海鹽、黑胡椒粉、沙拉油

蘸醬:

醬油4湯匙、醋2茶匙、糖1茶匙、蒜泥1茶匙、紅辣椒末1湯匙,白芝麻1湯匙

做法:

1. 許氏海輪牌澳洲鮑魚、魚肉切丁,海參絲發泡後,洗淨瀝乾備用。

2. 高麗菜、洋蔥、胡蘿蔔、香菇及青蔥切絲,韭菜切小段備用。

3. 起油鍋,爆香洋蔥絲,依序加入蝦仁、魚肉及魷魚圈、鮑魚丁、海參絲等海鮮炒至半熟,加入少許海鹽及胡椒粉調味後,取出備用。

4. 兩顆雞蛋放入大碗中打勻,依序加入中筋麵粉、糯米粉及冷水攪拌均勻後,加入適量的海鹽及胡椒粉調味,最後加入1茶匙泡打粉及少許沙拉油,攪拌成均勻絲滑的麵糊。

5. 拌好的麵糊中,加入胡蘿蔔絲、青蔥絲、高麗菜絲、香菇絲及各式海鮮,再次攪拌均勻。

6. 平底鍋中倒入2湯匙油燒熱,接著倒入調好的煎餅麵糊,用中小火煎至金黃定型。

7. 一面煎好後,翻面再煎另一面,翻面後記得壓一壓煎餅,使其受熱更加均勻,煎至兩面金黃酥脆,即可起鍋切塊盛盤。

8. 將所有蘸醬材料混合均勻,放在小碗中,搭配海鮮煎餅一同享用,風味更佳。
